INGREDIENTS

1 part Daffy’s
1 part Campari
1 part red vermouth
Flamed orange peel

METHOD

Combine all the ingredients with plenty of ice in a rocks glass, stir for 10 seconds then flame and add the orange peel.

TECHNIQUE:
HOW TO FLAME AN ORANGE, GRAPEFRUIT OR LEMON

The amazing aroma of citrus fruit comes from the oils  contained within their skin- releasing and flaming these give an amazing additional dimension to the Negroni and many other great cocktails.

1. Cut a firm strip of fresh citrus peel as thickly as possible without cutting too much into the pith, just under an inch wide and 2-3 inches long works well.

2. Hold a lighter or match flame to the peel held by its sides, moving the flame up and down the peel to heat and release the oils.

3. Hold the peel over the top of the glass with the flame between the peel and the glass- snap squeeze the peel to release and set fire to the oils over the glass.

4. Rub the flamed peel on the rim of the glass and use as a garnish.
