Three Delicious Easy-to-make at Home Summer Cocktails

Sunny days and warmer weather are heading our way… even in the Highlands (hopefully!), which means you’ll no doubt be spending more time in the garden with friends. Here are our top three refreshing Daffy’s cocktails to welcome the summer months.

Goddess Save the Queen

50ml Daffy’s Gin
35ml freshly squeezed lemon juice
30ml almond syrup
1 bar spoon of lemon curd
Add all ingredients to a shaker with plenty of ice, shake and strain into a glass.
Garnish with a slice of Swiss roll and add a floating Amaretto biscuit.

Blueberry Mojito

40mls Daffy’s Gin
30ml sugar syrup
30ml freshly squeezed lemon juice
15 blueberries
Mint leaves
Soda water to top up
Add blueberries and mint to your glass and squash them gently with back of spoon, just to release the juices. Add lots of ice, Daffy’s, syrup and lemon juice and stir. Top up with soda and garnish with mint leaves. 

Mulberry Spritz

Daffy’s Mulberry Spritz makes the perfect pitcher cocktail to share with everyone.
Just add Daffy’s Mulberry Gin, Prosecco, lemonade & elderflower cordial to a pitcher filled with ice and summer berries – voila!
